01 - Combine olive oil, minced garlic, salt, pepper, smoked paprika, Italian herbs, and lemon zest in a large bowl. Mix thoroughly until evenly incorporated.
02 - Add shrimp to the marinade and toss well to coat completely. Allow to marinate for 5 minutes at room temperature.
03 - Sprinkle grated Parmesan and chopped parsley over the marinated shrimp. Toss again to distribute evenly and coat each piece.
04 - Preheat air fryer to 400°F for 2 minutes before cooking.
05 - Place shrimp in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.
06 - Air fry for 6 to 8 minutes, shaking basket or turning shrimp halfway through. Cook until shrimp are opaque and lightly golden.
07 - Transfer shrimp to a serving platter. Garnish with additional fresh parsley and serve with lemon wedges on the side.
