01 - In a large pitcher, combine coconut water, orange juice, grated ginger, lime juice, and sweetener. Stir thoroughly until fully blended.
02 - Taste the mixture and adjust sweetness or acidity as desired. Add more honey for sweetness or additional lime juice for brightness.
03 - Fill two serving glasses with ice cubes. Pour the coconut-orange mixture over the ice, dividing evenly between glasses.
04 - Place an orange slice on the rim of each glass. Add fresh mint leaves as a finishing touch. Serve immediately while chilled.
