Watermelon Kiwi Fruit Pops (Printable)

Vibrant layered frozen treats made with fresh watermelon and kiwi purees. Naturally sweet, refreshing, and perfect for hot summer days.

# What You'll Need:

→ Watermelon Layer

01 - 3 cups seedless watermelon, cubed
02 - 2 tablespoons fresh lime juice
03 - 1–2 tablespoons agave syrup or honey (optional)

→ Kiwi Layer

04 - 3 ripe kiwis, peeled and sliced
05 - 1 tablespoon fresh lime juice
06 - 1 tablespoon agave syrup or honey (optional)

# How to Make It:

01 - Combine the cubed watermelon, lime juice, and sweetener if using in a blender. Purée until completely smooth.
02 - Pour the watermelon purée evenly into popsicle molds, filling each about two-thirds full. Gently tap the molds on the counter to release any trapped air bubbles.
03 - Place the filled molds in the freezer for about 1 hour, or until the surface is slightly firm to the touch.
04 - While the watermelon layer sets, blend the peeled kiwi slices, lime juice, and sweetener if using until smooth.
05 - Once the watermelon layer has firmed up, pour the kiwi purée on top, filling each mold nearly to the brim. Insert popsicle sticks into the center of each mold.
06 - Return the molds to the freezer and freeze for at least 3 hours, or until the pops are completely solid throughout.
07 - Run the outside of each mold under warm water for a few seconds, then gently pull the popsicle out by the stick. Serve immediately.

# Expert Advice:

01 -
  • These pops look like tiny edible sunsets with their red and green layers, and guests always assume you bought them from a fancy shop.
  • Zero cooking means your kitchen stays cool, which honestly is half the appeal when its scorching outside.
02 -
  • Do not skip the initial one hour freeze or the kiwi will sink into the watermelon and you will end up with a muddy orange pop instead of distinct layers.
  • If your kiwis are very tart, a second tablespoon of sweetener in that layer alone saves the whole batch from tasting sour next to the sweet watermelon.
03 -
  • If you do not own popsicle molds, small paper cups work perfectly and you simply peel the paper away when ready to eat.
  • Freezing the popsicle sticks in a thin slice of banana at the top of each mold keeps them anchored upright without any fancy equipment.
